		<description>When I wrote to Panera Bread recently(few days ago, Sep 2007) they confirmed that source of L-Cystein in their bagels is animal based. I am wondering what is correct. Here is what they wrote:
Here is the response from our nutrition department:  The mono and diglycerides are vegetable sourced. The L-cysteine is currently animal sourced, but we are working on finding another source for the L-cysteine in the future. Hope this informaiton helps.
